Serves 4-6

Prep - 15 mins

Cook - 25 mins

Fruit filling

  • 5 apples (600g)

  • 1 cup fresh cranberries (115g)

  • 3 tbsp brown sugar/ liquid sweetener

  • Juice of 1/2 lemon

  • 2 tbsp water

  • Splash of vanilla

  • Pinch salt

Crumble topping

  • 1/2 cup oats (50g)

  • 3/4 cup gf/plain flour (90g)

  • 1 1/2 tbsp brown sugar (25g)

  • 1 tbsp solid coconut oil (30g)

  • Pinch salt

  • Pinch cinnamon

Method:

  1. Chop the apples into 2cm chunks

  2. Add to a pot with the rest of the fruit filling ingredients and cook until soft (about 7-10 mins on a medium heat)

  3. Add crumble ingredients to a bowl and mix with hands until ingredients are well combined and like a sweet rubble (add more or less coconut oil/flour accordingly)

  4. Add the fruit filling to a dish and top with crumble topping

  5. Bake at 180 °C fan/ 200 °C/ Gas mark 5, for 25 mins.

For the best experience have it with custard or ice cream 😋 Enjoy!!
