This super easy pasta dish is my go-to when I’m in a rush or too hungry to even think. Not only do you avoid having to make a sauce, but the only real cooking you have to do is boil up some pasta.
I love the combination of the cool & creamy hummus, with the tang of the olives and the peppery rocket. It’s also such an easy way of getting more greens in!
Serves - 2
Cook time - 10 mins
2 handfulls pasta
1 tbsp hummus
1/2 cup green olives
1/4 large cucumber (chopped)
salt & pepper
squeeze of lemon
Boil the pasta in a pot full of boiling water & 1tsp salt, for about 10 mins
Once the pasta has finished cooking, drain it, and stir in the hummus
Add the rest of the ingredients, including salt and pepper to taste & squeeze of lemon, then give it another good stir
