French Toast (& Vegan Alternative)

Eating french toast is quite the unique experience, you just think 'how did they turn bread into this?!' The crispy edges, amber patches, and spongy yet velvety texture all come together in perfect harmony. You'd never know making it was so easy. Well at least I didn't that when I had it for the first time. I must have been about 12 and I was amazed. I still always am when I eat it, and I've been making it for years.

The secret to really good french toast is having the right bread. A day or two old fresh loaf always does the trick, and you can slice it however thick you like, about 1/2" think is my preferred thickness, or even a little fatter, which invites the milk mixture to be soaked up even further, but it also means you get more of the crispy crust once its been fried...the.best.bit. Of course any bread works, so use what you have. This is the perfect dish to get rid of leftovers at the end of the week.

You can get really creative with the toppings, sweet or savoury. It's best sweet in my opinion, drenched in syrup and sprinkled with fresh berries. It makes the best breakfast, or the best of any meal of the day if i'm being completely honest. 

Serves 2 - Prep time 5 mins - Cook time 5 mins

Ingredients

  • 4 slices Bread (not fresh)

  • 1 egg/ 2 Flax eggs

  • ¾ cup milk (I use a non-dairy alternative)

  • 1 tsp honey

  • Pinch salt

  • Olive oil

Toppings of choice: Fresh fruit/Maple Syrup/ Honey...or even my favourite Blueberry sauce

Method

  1. Wisk together the egg/ Flax egg with the milk

  2. Add the salt and honey

  3. Heat your pan with a few Tbsp oil on a medium-high heat

  4. Soak the bread in the mixture on both sides 1 or 2 at a time for about 10-15 seconds/ until the slice has absorbed the milk mixture

  5. Transfer to the pan and cook for about 2 mins on each side or until golden, there should be a sizzle as the bread hits the oil

Serve and enjoy!
