Sesame Crusted Salmon with Roasted Potatoes & Radishes

This is an excellent weeknight dinner. It comes together with little effort in about 25 mins, and is packed with flavour. It also embraces the flavours of spring and the brighter days it brings!

I recommend serving it with this tahini dip as a sauce on the side. It’s made of just tahini, yoghurt, garlic and salt & is the most perfect accompaniment.

Notes:

If you’re using a smaller fillet of salmon, or reducing the quantity of the recipe, you can use one large baking tray for both the veg and the salmon. Just remove the potatoes from the oven half way through their cooking process as instructed, then place the salmon and radishes in the tray, then place back in the oven.

Salmon- Feel free to use smaller fillets of salmon if you don’t like a large cut of fish, it works just the same!

Serves: 4/ Time: 25mins

Ingredients

  • Large Fillet of Salmon (approx 650g)

  • 2 tbsp Ground Cumin

  • 1 tbsp Chilli Flakes

  • 1 tsp Black Pepper

  • 2 ½ tbsp Sesame Seeds

  • 1 kg Baby Potatoes 

  • 400g Radishes 

  • Olive Oil 

  • Salt 

  • Small Handful Fresh Dill 

  • 1 Lemon

Method

  1. Preheat the oven to 200°C Fan/220°C/Gas Mark 6

  2. Slice your potatoes in half and place on a baking tray

  3. Drizzle with about 4 tbsp olive oil, and a large pinch of salt then toss

  4. Place in the oven for 15 mins as you prepare the radishes and salmon

  5. Slice the radishes in half then set aside

  6. Into a small bowl add the cumin, chilli, and black pepper

  7. Add in about 4 tbsp olive oil, or until a very loose paste forms 

  8. Place the salmon on a baking tray and pour over the spice and olive oil mixture

  9. Sprinkle over the sesame seeds and a pinch of salt, then place in the oven for 10 to 15 mins. If your fillet is quite thin, 10 mins will be just enough time to cook it through. For thicker fillets, check every minute or so from the 10 minute mark

  10. Add the prepared radishes on top of the potatoes, then place back in the oven for 10 mins, or until the radishes look a little translucent

  11. After 10 mins, both the salmon and the veg should be cooked

  12. Take any of the excess oils on the salmon tray, and drizzle over the cooked fish

  13. Sprinkle over a few sprigs of dill & a squeeze of lemon

  14. Serve as is, or add the veg to a large serving platter & flake over the salmon in large jagged chunks
